Minnie's is a coffee roastery and coffee house on Bermondsey Street. We buy green coffee from farms we know by name, roast it in small batches on site, and serve it across the counter the same week. Everything we pour, you can take home in a bag.

A roastery you can sit in.

Most coffee shops buy their beans in. We do not. Minnie's is a working roastery with a coffee house built around it, so the coffee in your cup was roasted a few steps away, often the same morning. Sit with us for a flat white pulled at the bar, or take the very same roast home in a bag. One craft, two ways to enjoy it.

In the roastery

How we roast.

We roast in small batches on a traditional drum roaster, a few kilos at a time, so we can follow the character of each origin rather than push everything to the same dark finish. Green coffee rests in jute sacks until it is ready, then spends eleven to thirteen minutes in the drum while we watch the colour, the smell, and the first crack. Everything is roasted to taste, then cooled, rested, and bagged on site.
